Kielbasa with Peppers and Onions

I love this quick and easy recipe.
It comes to together very quickly and
has a lot of flavor.

This is a recipe I created myself.
It can be changed easily to go with your's
and your family's preferences.

Now on to the recipe!

 You will need one onion and pepper
sliced into strips.

Next heat approximately 3 Tbsp of Extra Virgin Olive Oil
in a large skillet (med high heat).
Place the peppers and onions into the heated skillet
with 1 Tbsp minced garlic.
Cook for about 10 minutes until onions/peppers
begin to soften.
Take 2 -1 lb pkgs of kielbasa (this is
actually smoked sausage - tasted fine
just the same).
Cut into about 1/2" pieces
Add to peppers and onions in skillet
with 2 Tbsp of Frank's Red Hot.
Cook for another 5 to 10 minutes until
sausage is heated through.  Reduce heat to low.
Now add 1 cup of shredded cheddar cheese
to the top of the sausage, peppers and onions.

Heat for another 2 minutes and then 
stir melted cheese through sausage,
peppers and onions.

I usually add mushrooms to this dish.
However, I did not have any on hand tonight.
Still was great though.
