Menu Planning Recipes - January 20-27

Well, if you will notice, I skipped a week.
January 14-18th the flu (or stomach virus) struck the 
Johnson household!  YUCK!!
Needless to say, not a lot of cookin' went on
in our house that week.

So, here the recipes for this past week!

Sunday - January 20, 2013
Buffalo Chicken Wraps
Crock pot recipe
Taken from Iowa Girl Eats.

2 large chicken breasts, cut in half
1/2 of a 1 oz pkg Hidden Valley Ranch Dip Mix
1 (17.5oz) bottle of buffalo wing sauce
2 Tbsp butter
Place chicken in the bottom of a crock pot.  Sprinkle
dip mix on top.  Pour in 3/4 bottle of wing sauce and lift
up each chicken half so it gets sauce underneath.
Cook on low for 6 hrs. for thicker breasts, 5.5 hrs for
thinner ones.  Remove from liquid and shred chicken.
Discard liquid.  Melt 2 Tbsp butter in a small
saucepan then combine with shredded
chicken and rest of wing sauce.
Place mixture in tortillas with spinach.

*NOTE* I used an entire pkg of ranch dip mix 
and Texas Pete buffalo wing sauce.

Yep, just plain ol' pigs in a blanket.

Tuesday - January 22, 2013
Ranch Pork Chops
Crock pot recipe

4 pork chops
1 pkg Hidden Valley Ranch Dressing mix
1 can cream of chicken soup plus 1 can of water

Spray cooker with non-stick cooking spray.  Place pork chops
in crock pot.  Mix ranch dressing, soup and water together.
Pour over pork chops.  Cook on low for 4 to 6 hours.

Wednesday - January 23, 2013
Pork Chops Supreme

1 large onion, sliced
4 to 6 medium potatoes, peeled and sliced
1 can cream of mushroom soup
4 to 6 pork chops (thick cut is good)
Salt and pepper to taste

Lightly spray cooker with butter or garlic flavored spray.
Put onions and potatoes in bottom of cooker.  Top
onions and potatoes with chops, salt and pepper.
Pour soup over all ingredients.  Cook
on low for 6 to 8 hours.

Thursday - January 24, 2013
Crock Pot Round Steak
Taken from

1 to 1.5 lbs round steak, cut into bite size pieces
2 cans cream of mushroom soup 
1 pkg. Lipton's onion soup mix

Spray cooker with non-stick cooking spray.
Combine all ingredients in cooker and mix well.
Cover and cook for 6 to 8 hours on low.
Serve over pasta.

Quesadilla Casserole
This is a freezer meal.

1 lb. ground beef
1/2 c chopped onion
2 tsp chili powder
1 tsp ground cumin
1 tsp dried minced garlic
1/2 tsp oregano
1/2 tsp crushed red pepper (optional)
1 16-oz can tomato sauce
1 can (15 oz) black beans, rinsed and drained
1 can (8 3/4 oz) corn, undrained
1 can (4 1/2 oz) green chilies, undrained
6 flour tortillas (8 in size)
2 c shredded cheddar cheese

Brown beef and onion in large skillet on medium high heat.  Add
tomato sauce, beans, corn and chilies.  Mix well.  Stir in all of the 
spices except red pepper.  Bring to a boil, reduce heat low and simmer
5 minutes.  Add red pepper to taste if desired.
Spread 1/2 c of the beef mixture on the bottom of 9x13 pan sprayed with
non-stick cooking spray (use foil pans for freezing).  Top with
3 tortillas, overlapping as needed.  Layer with 1/2 of the remaining
beef mixture and 1/2 of the cheese.  Repeat with remaining
tortillas, beef and cheese.  Double wrap with foil, label with 
cooking directions and freeze.
Cook instructions: Thaw and bake uncovered at 350 degrees
for 15 to 20 minutes.  Let stand for 5 minutes before serving.
