Baked Chicken Fajitas

Oh chicken, you have definitely became
a mainstay in this house.  I was joking
around with Johnny tonight about this.

Johnny use to hate chicken.  I would
mention having chicken for dinner and 
he would make a nasty face.
Since his surgery, that has changed.
Chicken has a lot of protein and his
pouch can break it down easily.
Therefore, chicken (like I said before)
has became a mainstay in this house.

With all that said, these are great.
25 minutes in the oven and you have
great tasting chicken fajitas.
One of the best recipes I have found
on Pinterest.  

Now on to the recipe!


Baked Chicken Fajitas

1 lb boneless, skinless chicken breasts, cut into strips 

1 (15 oz) can diced tomatoes
1 (4 oz) can diced green chilies
1 medium onion, sliced
1 large bell pepper, seeded and sliced
2 Tbsp vegetable oil
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp salt
12 flour tortillas, warmed


1.  Preheat oven to 400 degrees.

2.  Grease a 13X9 baking dish
I used this aluminum pan because
I already had one on hand.  Makes
cleanup really easy too -- LOL!

3.  Mix together chicken, tomatoes, chilies,
peppers and onions in the dish.

*NOTE* I used tomatoes
tonight that had chilies added.
So, I did not add the extra chilies.

4.  In a small bowl, combine the oil and the spices.


5.Drizzle spice mixture over chicken and 
toss to coat.

6.  Bake uncovered for 20-25 minutes
or until chicken is cooked through and
vegetables are tender.

7. Serve with warm tortillas.

Tonight Johnny and I ate ours without tortillas.
Again, we have to watch this type of stuff
with Johnny.  I just added a little sour
cream and a little shredded cheese.
