Sausage Spanish Rice

Oh My!  This is the best recipe to
warm you up on a cold winter night.
It is so rich and hearty, it
makes for a happy belly.

I honestly have not made this recipe
in several years.  Not because
the family doesn't like it or that 
it is difficult to make.  I honestly
forgot I had this recipe.  
However, I am so glad that I found 
it the other day!

So, if you are looking for a great
filling meal contained all in one
pot, then this is the recipe for you.

Now on to the recipe!


Sausage Spanish Rice
Crock pot recipe
This is cooked in a 5 qt or larger crock pot.
Anything smaller and it simple will not all fit!
Serves 9 (so enough for leftovers)

1 lb. fully cooked kielbasa or Polish sausage
2 cans diced tomatoes, undrained
2 c water
1 1/2 c uncooked converted rice (this is NOT minute rice)
1 c salsa
1 medium onion, diced
1/2 c chopped green 
1/2 c chopped sweet red pepper
1 can (4 oz) chopped green chilies
(these may be omitted if you purchase
the tomatoes with chilies already added) 
1 envelope taco seasoning

In crock pot, combine all ingredients and stir to blend.
Cover and cook on low for 5 to 6 hrs or until rice is tender.

*NOTE* I can not stress this enough, this recipe calls for REGULAR
rice and NOT minute rice.
Also, I do not use two separate types of peppers (a green and a red).
I just use one green pepper and that is all.
