My hubby is in love with kielbasa. I swear I think
he could eat it everyday. When I ask what he would like
for dinner, many times kielbasa comes up.
Now, don't get me wrong. I like kielbasa. However,
I am always trying to find new ways to make it.
So, I found this recipe on Cooks.com.
I have to say that I love this recipe site.

on this recipe site.
I did tweak this recipe a little. Yes, I know
I do that a lot. However, that is something else
Johnny can take credit for around here. Pulling me
out of my comfort zone that recipes must be followed
to the letter. Yes, there are some recipes that I follow
completely as written and I will never budge on those
few recipes. However, I get a "little" more comfortable
with tweaking other recipes.

Ingredients you will need (ignore the honey,
I promise it is not in this recipe)
PREHEAT OVEN TO 375 DEGREES
1 pkg. Polish sausage or Kielbasa
1 can cream of potato soup or cream of celery
or cream of mushroom
1 small bell pepper
1 small onion
2 cups shredded cheddar cheese
1 pkg. of hash browns
1. Slice Kielbasa in rounds.
2. Brown diced onions, pepper and Kielbasa in pan.
I seasoned the mixture with the following:
Of course, you don't have to season it at all.
However, I love these two seasonings and
use them A LOT!
3. Put in a 2-qt casserole.
This pan turned out to be TOO big. So,
I switched to another pan!
4. Cover with hash browns and soup of choice
(I used Mushroom of course. It is always on hand
in my house!)
I mixed the soup through the kielbasa mixture and potatoes.
Stir very carefully -- LOL!
5. Top with cheese.
The original recipe said to put one cup of
cheese on the top and then save a cup to top
when finished baking. I just went ahead and topped
it with all the cheese.
6. Bake for 30-45 minutes.
7. Serve hot. Makes 6 servings.
This is very good. Very hearty.
This is an easy recipe to have all the ingredients
on hand for a quick fix in the evenings. I know
I currently have all the ingredients on hand right now.
Maybe this will be dinner later this week!
