Mexican Stuff Shells

Have you noticed how many recipes are popping up on Facebook now a days? It is staggering the number of recipes that come through my timeline each day.

The other day, Johnny told me about a recipe he had seen on his timeline.  I read over the recipe and thought it sounded pretty good.  So, tonight at the store I grabbed the ingredients to make these shells.

OMG!!  I just have to say these things are AMAZING!! They are so good the recipe is getting it's own
recipe card in my good recipe binder. (Standing joke in our house. I will explain later.)


Quick note: As you know, I always try to link back to the original recipe. However, that is not possible with this recipe anymore. The link has been taking down. So, I can not give credit to the original author. Sorry.

Now on to the recipe!


You will need:

1 lb. ground beef
1 pkg taco seasoning
4 oz cream cheese
16 jumbo pasta shells
1 1/2 c salsa
1 c taco sauce
1 c shredded cheddar cheese
1 c shredded monetary jack cheese

Toppings: black olives, green onions and sour cream



Preheat oven to 350 degrees.

While oven is preheating, brown your ground beef in large pan.


Add taco seasoning, prepared to directions.


Add cream cheese, cover and simmer until cheese is melted. Stir together and mix well. Set aside to cool.


While the beef is cooking, cook the pasta shells according to the directions; drain.


Set shells out individually so they don't stick together. The original recipe said to use a baking pan. I just used plates.

Pour salsa on the bottom of 9X13 baking dish.

Stuff each shell with 1-2 Tbsp of meat mixture.

Place shells in pan open side up.

Evenly cover shells with taco sauce.

Cover baking dish with foil and bake for 30 minutes.

After 30 minutes, remove from oven and remove foil.

Add shredded cheese and bake another 10-15 minutes without foil.

Top with green onions and olives. Serve with sour cream and salsa (if you choose).

Like I mentioned before, it is definitely going into the good cookbook. This is a new family go to recipe.
