Sissy's Squash Bake

I am so EXCITED that our farmer's market has
opened at our church.  I love the fact I can
go and purchase fresh produce every week now.

Oh yes, we do have another farmer's market in Charleston.
It is a whether big one.  However, I just love the fact
that this one is 3 minutes from my house and is
helping MY community!!

Also, I am loving having the market open because
JJ and I have recently started eating low carb.
Therefore, I have easy access to fresh produce!!
Win Win!!

Here is the first recipe I came up with from
squash, hot banana peppers and sweet
banana peppers I purchased on Friday.
I love the fact it only has 10.7 g of carbs
(153 calories) per serving minus the cheese.
I have been taking this to work with me for the last
two days and it gets yummier and yummier
as the flavors meld together.

Now on to the recipe!


Sissy's Squash Bake

Preheat oven to 350 degrees

3 medium size squash
3 hot banana peppers
3 sweet banana peppers
1 large onion
Extra virgin olive oil
Seasoning of your choice

1.  Cut the squash in rounds.

2.  Place in baking dish (I used a 9x13).

3.  Drizzle on 4 Tbsp of extra virgin olive oil.

4.  Season with seasoning of choice.  I used
the Beer and Garlic blend from Cabela's and a little
pepper.

5.  Bake for 20 minutes.


6.  While squash is cooking, cut up hot and sweet
banana peppers into chunks.  Cut onion into
wedges.
*NOTE TO EVERYONE*
Use rubber gloves when handling the hot peppers.
I accidentally touched my chin and I thought I was
going to die!

7.  When squash is done, pull pan from
oven and add the peppers and onion.


8.  Drizzle with a little more olive oil and seasoning.
Toss to coat with spoon.


9.  Bake another 20 minutes.

10. When finished, add shredded cheese to top
and place back in oven to let cheese melt.
You can always leave the cheese off and I am going to 
the next time I fix this dish.
