Avocado Spread

As I said yesterday, I have fell in love with avocados.  They just taste so good!

Today I decided to try my hand at making an "avocado sauce."  I wanted something I could use on pork, chicken or some other type of protein.  What I came up with has become an instant Johnson family favorite.  My men immediately fell in love.  So, I guess I have a keeper on my hands.  

Now, this recipe does make a good amount.  You could definitely half this recipe and still have plenty.  

We have already tried this as a spread on wraps and it was really good.  I plan on using it as well as a dip for my veggies.  As a sauce over meat, it was delicious as well.  I could imagine a lot of ways this spread could be used in dishes.


Avocado Spread
Busy Cookin' WV Momma

4 avocados, halved and pitted
1/2 onion, roughly diced
6 oz. cream cheese
4 heaping Tbsp of mayonnaise 
Lemon juice
1 1/2 Tbsp minced garlic
1 Tbsp black pepper
1 Tbsp salt
2 Tbsp cumin
2 Tbsp red pepper flakes
3 Tbsp olive oil



In your food processor:

Add the following:
Avocado - scoop out with spoon 


Garlic (use a Tbsp from your silverware)

Mayonnaise (again use your Tbsp from silverware)

Onion

Cream cheese

Lemon juice (I used four good squirts.  Call me Rachel Ray when it comes to measuring lemon juice - LOL)

Cumin

Black pepper

Salt

Red Pepper Flakes

Olive oil

Place top on food processor and process until all ingredients are combined.


As I stated before, this makes a good amount.  However, it tastes so good, that you will want to put the spread on everything.
