Jalapeño Popper Scrambled Eggs

Our family has became obsessed with hot peppers.  Hot banana, sweet banana, jalapeños - if we can find something to do with them, we are cooking with them!

Now, can you imagine how excited I got the other day when I found this recipe??  Super excited would be an understatement!  First, it has jalapeños in the recipe.  Second, it fits in perfectly with my low carb diet.  Third, I love poppers and this sounded delicious!!

I know some people don't like a lot of spice in their food.  I will tell you right now, this is not that hot.  There is a little heat from the jalapeños; however, the eggs/cheese keeps it at a minimum.

Jalapeño Popper Scrambled Eggs

2 eggs
1 jalapeño, diced
1 strip of bacon 
2 Tbsp cream cheese
Cheddar cheese for top

1.  Cook bacon until crispy and set aside to cool.

2.  Add diced jalapeño to pan.

3.  Then add eggs and cook.

4.  When eggs are almost done, add cream cheese and incorporate into eggs.

5.  Crumble in bacon.

6.  Top with grated cheddar cheese.  Note: I used hot pepper cheese because I did not have cheddar cheese - LOL!

7.  Serve immediately.

My boys loved this recipe.  JJ has already asked for me to make it again.  When he does that, I know I have a winner on my hands!
