Tuna Cakes

Ok, I will admit something.  I personally do not like tuna out of a can.  I have never liked tuna salad or plain tuna.  Oh yes, I ate my share growing up but I never said I liked it one time.  However, this recipe has me singing a different tune.

I found this recipe on the Kraft Food website (www.kraftfoods.com).  These tuna cakes became an instant family favorite and is asked for quite often.  

Tuna Cakes
By Kraft Foods (tweaked by Busy Cookin' WV Momma)

2 cans (5oz each) light tuna in water, drained and flaked
1 pkg (6oz) Stove Top Stuffing for Chicken
1 c Kraft shredded mild cheddar cheese
3/4 c water
1 carrot, shredded
1/3 c Kraft mayo
2 Tbsp pickle relish



1.  Mix all ingredients together.  Refrigerate for 10 minutes.






This is where I vary from the recipe.  I use pickle juice (2 Tbsp) instead of relish.  I don't like relish and neither do my men.


2.  Hear large, nonstick skillet sprayed with cooking spray.


3.  Use ice cream scoop to add 1/3c portions of tuna mixture, in batches, to skillet.  Note: I use a 1/3 cup measuring cup to portion out my cakes.



4.  Flatten into patties with back of spatula.  Cook 6 minutes or until golden brown on both sides, carefully turning patties after three minutes.



I promise, these are amazing!!  And any little or big picky eaters will agree.
