Cheesy Onion Mushroom Kielbasa

I love to create new recipes.
I love digging through my cabinets to see
what I can come up with to make dinner.
It is like a great treasure hunt for me!

The other reason I love creating recipes is
because it saves on the grocery bill.
Who does not love cutting their 
grocery bills??

The other night, this recipe was born out
of having some left over Velveeta, salsa, and
kielbasa.  I had to go to the store for
the mushrooms, onions and another
package of kielbasa.  However,
everything else was here at home.

Now, I know some of my readers
do not care for mushrooms.  That is fine.
Leave them out!  I am sure it will taste
just as good without them.  My family and I
love mushrooms.  Thus they show up in my
recipes a lot!


Cheesy Onion Mushroom Kielbasa

You will need:
2 lbs kielbasa (I only have one pictured, but
I did use two.  Pinky promise.)
1 large onion
1 package of sliced mushrooms
Approximately 8 oz Velveeta (I used the Kroger
variety.  I like using this kind and honestly, it is
cheaper.)
1/2 jar of salsa (any flavor and variety.  Your choice.)
Olive Oil (Extra Virgin)
Salt and Pepper


1.  Cut onion into pieces.

2.  Run a knife through the mushrooms slices
just to chop up the larger pieces.

3.  Add onions and mushrooms to a preheated pan
containing approximately 2 Tbsp of olive oil.
Season with salt and pepper.

4.  While onions/mushrooms cook, slice your
kielbasa into rounds.

5.  Once onions/mushrooms are cooked, add kielbasa.

6.  Reduce heat and let kielbasa mixture heat slowly.
While this is heating through, slice your cheese.

7.  Place cheese into a microwave safe bowl.
I used my Pampered Chef glass mixing bowl.
I love this mixing bowl.  I love the fact the handle
stays cool even when microwaving.  If you don't have one,
I would HIGHLY recommend purchasing one.

8.  Microwave on high for 1 minute.  Remove and stir.
Microwave on high for another minute.  Remove and stir.
Add in the salsa.

9.  Microwave again for another minute.  Remove
and stir until all lumps are gone.

10.  Add to kielbasa mixture.

11.  Stir thoroughly and serve.

The men in my house loved this recipe.
It was a little spicy due to the type of
cheese and salsa I used in the recipe.
Of course, you can adjust this to your
own preferences.
