Parmesan Shrimp (It's What's For Valentine's Day Dinner)

Ah, Valentine's Day.
The day when you can not get into
any restaurant especially when it falls
 on a Friday night.

Therefore, this year, I cooked at home
for me and my men.  Besides making
it more special, I got to spend some
quiet time alone with my men.  I really
liked that aspect!

I have had this recipe 'pinned' for a while
on my Pinterest account.  I decided this
 would make a great Valentine's meal
especially since we all love seafood.

Parmesan Shrimp

You will need the following:
24 large shrimp
1/4 c olive oil
1/4 c chopped fresh parsley
3 garlic cloves (minced)
1/2 tsp red pepper flakes
1/4 tsp black pepper
1/2 c melted butter
1/2 c toasted Italian breadcrumbs
1/2 c freshly grated Parmesan cheese

* *NOTE**
I did not use parsley because I could not find any
at my neighborhood Kroger.  Also, I used prepackaged minced garlic,
a pound of shrimp from the seafood counter, and Parmesan cheese from the can.
If I had had more time, I would have went through all these steps.  Also, it was
a cost issue too.  I did not want to buy extra ingredients if I already had these on hand.

1.  Preheat oven to 300 degrees.

2.  Arrange shrimp in a 11X7 baking dish.

3.  Coat shrimp with:
Olive Oil

Minced Garlic
(This garlic from Spice World is the bomb!!
I love this stuff!
1/2 tsp = 1 clove of garlic)

Crushed red pepper flakes

And black pepper

**NOTE** This is when you would also add
  the parsley if you are using it.

3.  Mix shrimp and spices together.

**NOTE**  Use your hands in this step.
It works a lot better and everything gets
coated very well.

4.  Cover and bake for 15 minutes.

5.  Once complete, turn shrimp over and complete 
the following steps:
Drizzle with butter

Sprinkle breadcrumbs over shrimp

Sprinkle Parmesan cheese over shrimp

6.  Place topped shrimp back into the oven uncovered
from 5-10 minutes more.

This is my final product:

This was absolutely wonderful!!
The flavor was great.  My men loved
it so much that JJ has already asked
for me to make it again.  I count that
as a big win in my book.
