Mushroom Gravy Slow-Cooked Rump Roast

I love a good roast. Potatoes, carrots and onions
plus a big chunk of meat, who doesn't love that?
However, sometimes I want to try new ideas with my roasts.
I have found several really good ones. But when I found 
this recipe that contained mushrooms, WOO HOO!!

I found this recipe in a wonderful cookbook
my sister-in-law, Misti, gave me for Christmas.

I love this cookbook! The recipes are awesome.
Her instructions are easy to follow. It is a great cookbook.
I would highly recommend it to anyone even if 
they are not following a Paleo diet.


Mushroom Gravy Slow-Cooked Rump Roast

1-2 lb beef rump roast
3-4 c chicken broth (no sugar added)
2 large onions, roughly chopped
5-6 garlic cloves, peeled
1 (8oz) container of mushrooms, sliced
Salt and pepper to taste
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1/2 c full-fat coconut milk, canned


1. Add in the broth, coconut milk, onions, garlic, mushrooms,
and spice to your slow cooker and mix together.

2. Place roast in middle of the mushroom mixture.

3. Turn on low for 6-8 hours.

4. Enjoy!


This was so full of flavor. My men and I loved
this roast. It will definitely go into the family
dinner rotation.

I also wanted to note several things.

First, my chicken broth was not sugar free.
I actually have no idea where to find this ingredient.
If I were strictly following Paleo, I would definitely
look for this type of chicken broth.

Second, I used double the amount of mushrooms.
Ms. Bauer gave this suggestion and I decided "why not?"
Plus, we love mushrooms. I would recommend following
this suggestion. The main reason is like she stated that 
mushrooms seem to disappear in slow cooking.
