I honestly do not know what I would do without
my slow cooker.
I honestly think some days I would be lost without it.
This piece of cooking equipment is my lifesaver
more days than not. That is especially true now
that I am cooking more at home. If you do not
have one these little darlings, I highly recommend you
going and purchasing one very soon.
Today, I went back to my slow cooker bible for
this recipe. Besides owning a slow cooker, I would
highly recommend owning the "Fix-It and Forget-It Big Cookbook."
I have wrote about this book before and I probably will again.
With 1400 recipes, everyone can find something
they like in this book.
Tonight's dinner took on a little Asian flare.
My men and I love Chinese food. It is one
of our favorites. So, when I found this recipe
in the book, I really wanted to give it a try.
Beef and Pepper Rice
from "Fix-It and Forget-It Big Cookbook"
Note - My changes will be in italics.
You will need:
1 lb. ground beef
2 green peppers or 1 each of green and red,
1 c chopped onions
**I used a pepper and onion blend because
I forgot my vegetables at work. Don't ask, LOL!
However, this is what I will do in the future also.
1 c brown rice, uncooked
2 beef bouillon cubes, crushed
3 cups water
1 (2) Tbsp soy sauce
1. Brown ground beef and drain.
I seasoned my meat with salt, pepper
and garlic powder.
2. Combine all ingredients in your slow cooker.
3. Cover your cooker. Set your time for your
specific cooking time - 5-6 hours on low or
3 hours on high.
Here was my finished dish:
My men and I liked this recipe.
I think it needs a little more seasoning.
So, I will play around with the recipe
the next time. We rounded out the meal
with egg rolls from our favorite take-out place.
