Oven Roasted Ranch Potatoes

Main dishes are, more times than not, the shining
star of any meal. However, I believe that sometimes,
side dishes can be a shining star as well. 

I know when I am fixing a main dish that is a tried
and true favorite, I like to find a new side dish to
accompany the meal. That way, I serve my family
something I know they like, but also add some new
life to the meal. 

This recipe was created when I was trying to
think of something new for potatoes. I get tired of
mashed, scalloped, onion, etc potatoes. So, when I found
Kraft ranch packets at my local Wal-mart, my creative
wheels started turning. 

I also made this recipe very simple.
Three ingredients, a pan and your oven.
That is it. Sweet!!

Oven Roasted Ranch Potatoes

You will need:
5-6 red potatoes, scrubbed clean
1 package Kraft ranch mix
Extra Virgin Olive Oil

Preheat oven to 425 degrees.

1. Scrub your potatoes and the cut into
bite size pieces.
I personally do not peel my potatoes before cooking.

2. Place potatoes in a baking dish.

3. Liberally coat potatoes with EVOO.

4. Sprinkle potatoes with ranch mix.
If you can not find this particular type of ranch,
you can substitute another ranch mix. I used this
one because I had never tried it. Also, this one was 50¢
cheaper than the brand I usually use in recipes.

5. Using your hands, ix potatoes well to distribute
oil and seasoning to all potatoes.
Yes, your hands! Spoons are great, don't get me wrong.
However, sometimes the best tool is your hands.

6. Place in your oven and cook for 20-25 minutes
until potatoes are done.

These had a great flavor. My men really
enjoyed them. I wish I had made a little bigger
batch so there could have been more leftovers.
These were a nice change from the usual mashed potatoes.
