Broccoli Cheese Bites

If I had to pick my favorite vegetable, I would have to say it is broccoli. I have always loved broccoli. Cooked, steamed, roasted, in soups, raw - it is all good to me.

When I found this recipe, I knew it would be a hit with my men. Thankfully, they both like broccoli and do not mind when I make it. Plus, it looked simple enough for a weeknight side dish especially since it only had four main ingredients. Score two points for mom!

The original recipe for these bites can be found on Stacey Snacks. In her recipe, she used fresh steamed broccoli. I think I will try this next time. However, I will wait until a weekend because I think it is easier to use the frozen variety for a weeknight side dish.

Broccoli Cheese Bites

Adapted by The Busy Cooking Momma

You will need:
16 oz package of frozen, chopped broccoli, thawed and drained of liquid
1 1/2 c shredded cheddar cheese 
3 eggs, slightly beaten
Salt and pepper
1 c seasoned Italian breadcrumbs
 

Preheat oven to 375 degrees. In a bowl, mix together your broccoli,

cheese,

eggs,

and breadcrumbs.

Season with salt and pepper and mix well. Do not be afraid to use your hands to get everything mixed well.

Using your hands, form small patties and place on a prepared baking sheet.

Bake in preheated oven for 25 minutes turning after the first 15 minutes of baking.

 I served mine with ham and mac and cheese.

These were so good. The hubby and I agreed that the next time we are going to change the cheese though. We are going to use pepper jack cheese instead of the cheddar cheese. We agreed we would like to give it some heat.

Ingredients:

2. In a large mixing bowl, mix together the broccoli, shredded cheese, eggs and breadcrumbs. 
3. Season mixture with salt and pepper.
4. Form small patties and place on a prepared baking pan.
5. Bake for 25 minutes. Turn bites over after 15 minutes of cooking.
6. Serve with your favorite main dish or as a healthy snack. Enjoy!!
