Crustless Pizza Casserole

Ah, pizza. Probably one of my favorite foods of all time. There are so many different things you can 
do with pizza. There are so many different toppings you can choose from. As we all know, the possibilities are endless. That is why I think I love it so much. Well, that and the gooey, melted cheese. YUM!!

Though we are a family that loves our pizza, it is not a food we really should consume all the time. Mainly, my hubby should not have all the bread/dough since his gastric bypass surgery. Plus, I am trying to follow a low-carb diet right now. So, this is a great recipe because it uses NO dough at all.

The original recipe for "Crustless Pizza" can be found on the website Sugar Free Chic. Her website is filled with great recipes for a low carb lifestyle. So, this recipe helps both the hubby and I with both of our dietary needs. Limited bread/dough for him, Low-carb for me. Winner!!

Crustless Pizza Casserole

You will need:
Meat of your choice
Vegetables/favorite pizza toppings
Marinara sauce or pizza sauce
2 1/2 c of cheese

Preheat oven to 350 degrees

I used the following ingredients:
Several slices of cooked ham
1 pkg of jalapeno pepperoni
6 precooked sausage patties
8 to 9 slices of thinly sliced salami
1 large can of mushrooms
1 can of medium size olives
Mushroom flavored pasta sauce
Mozz. shredded cheese

After slicing all meats, mushrooms, olives, I mixed them all together in a bowl. I did this step so the ingredients were not layered but mixed evenly throughout the casserole.

I then layered the ingredients in these steps:
Meat/Toppings

Sauce

Cheese

Some more pepperoni

Bake for 30 minutes until the cheese is melted.

This was really delicious.

Now, I will say this. The next time I will make my own pizza sauce instead of using jarred sauce. Second, I want to add some sauteed onions and banana peppers. Honestly, like "regular pizza," the options are endless.

Prep Time: 15 minutes       Cooking Time: 45 minutes     Difficulty: Easy

Ingredients:
Meat of your choice (pepperoni, ham, sausage, etc)
Vegetables of your choice
Pizza toppings of your choice
1 cup marinara sauce
2 cup mozzarella cheese

Directions:
1. Preheat oven to 350 degrees.
2. Spray a casserole dish with cooking spray. 
3. Prepare all of your ingredients and combine in bowl. Or you can layer the toppings as you go. This is completely your preference.
4. Cover the toppings with the marinara sauce.
5. Sprinkle cheese over the top of the casserole.
6. Place pieces of pepperoni on top.
7. Bake for 45 minutes until cheese is golden and bubbly.
8. Serve and enjoy!!
