Creamy Chicken and Broccoli for the Slow Cooker

Ok, I am done with winter! I am seriously chilled to the bone. However, this dinner delivered a delicious, body warming meal.

Another plus to this meal was I had most of the ingredients already on hand. I love recipes like this one. The less I have to buy, the happier I am! I also saved a little more money by doing a substitution with the chicken. Instead of using boneless, skinless chicken breasts. I used boneless, skinless chicken thighs.

I personally like using chicken thighs in the slow cooker. To me, they just seem to be juicier than chicken breasts. I sometimes feel like chicken breasts dry out in the slow cooker. Not always, but sometimes.

The original recipe can be found at Picky Palate. The are some other great recipes on this site I would like to try in the near future. Again, some changes have been made in my version. The recipe that follows is my take on the original recipe.

Now, on to the recipe!


Creamy Chicken and Broccoli for the Slow Cooker

You will need:
6 boneless, skinless chicken thighs
1 14oz can of cream of chicken soup
1 14oz can of Fiesta nacho cheese soup
1 14oz can of chicken broth
1 tsp Cajun seasoning
1/2 tsp garlic salt
1 c sour cream
6 c steamed broccoli
1 pkg of egg noodles


1. Spray slow cooker. *Ok, I know most recipes do not call for this step, However, I ALWAYS spray
my cooker. I have had a couple of things stick in the past and I do not want a repeat performance.*

2. In slow cooker, combine the soups and chicken broth.

3. Add in Cajun seasoning and garlic salt.


4. Mix well.

5. Place chicken thighs into slow cooker submerging the thighs in the mixture.

6. Cook on low for 6 hours or high for 3 hours.

7. Shredded the chicken with two forks.

8. Add in the cooked broccoli and sour cream.

9. Combine everything and let cook for another 15 minutes to let flavors combine.

10. Serve the chicken and broccoli over cooked noodles.

This was simply delicious. The flavors were amazing. The men loved it and so did I. This will definitely be made again in the very near future.

Prep Time: 15 minutes               Cooking Time: 6 hours (low)            Difficulty: Easy

Ingredients:
6 Boneless, skinless chicken thighs
1 14 oz can cream of chicken soup

Directions:
1. Combine the soups and the broth in the slow cooker.
2. Add the Cajun seasoning and garlic salt. Mix well.
3. Place chicken thighs in the slow cooker, submerging thighs into the mixture.
4. Place the lid on the slow cooker.
5. Cook on low for 6 hours or high for 3 hours.
6. Once cooking time is complete, shred the chicken with two forks.
7. Add the cooked broccoli and sour cream to the slow cooker.
8. Combine everything and let cook for another 15 minutes to let flavors combine.
9. Serve over cooked egg noddles.
10. ENJOY!!
