Kickin' Sriracha Popcorn Shrimp

 I love the ease of  frozen popcorn shrimp. I mean seriously, take it out of the freezer, put the shrimp on a pan, place in the oven and you have dinner. However, today I wanted to do something different.
I wanted to incorporate some sort of sauce to coat the shrimp. Then it came to me, use the sauce
I had used on some salmon a few months ago. 

I found this sriracha sauce that accompanied salmon on Damn Delicious. The recipe was amazing but the sauce. Oh My!! It was so good. So, I decided to use this sauce on the popcorn shrimp. Thus, Kickin' Sriracha Popcorn Shrimp was born.

Kickin' Sriracha Popcorn Shrimp

You will need:

2 boxes popcorn shrimp
Mayonnaise
Sriracha sauce
Sweetened Condensed Milk
Green Onions

Place shrimp on a baking pan and bake according to package directions.

While shrimp is baking, put together the sauce. In a large mixing bowl, combine the mayonnaise (Please, please do not use Miracle Whip)

Sriracha sauce

Sweetened Condensed Milk

Whisk until all ingredients are combined and set aside.

Now, chop three green onions using only the stems.

Once the shrimp is done, carefully transfer shrimp to the sauce.


Using a spatula, gently toss the shrimp in the sauce until the shrimp is evenly covered.

I served my Kickin' Sriracha Popcorn Shrimp with some teriyaki flavored noodles.

The flavor of this dish was divine. It turned ordinary frozen popcorn shrimp into an amazing dish. My men loved it and in my book, that is a HUGE win.

Kickin' Sriracha Popcorn Shrimp

Prep Time: 10 minutes                 Cooking Time: 20 minutes              Difficulty: Easy

Ingredients:
2 12oz boxes of frozen popcorn shrimp
1 cup of mayonnaise
5 Tbsp of Sriracha sauce
3 Tbsp sweetened condensed milk
3 green onions, stems only 

Directions: 
1. Preheat oven according to directions on the box.
2. Place shrimp on baking sheet and bake per directions on box.
3. While shrimp is cooking, begin preparation of sauce.
4. In a large bowl, add mayonnaise, Sriracha sauce, and sweetened condensed milk.
5. Whisk until all ingredients are combined. Set aside until shrimp is done.
6. Chop green onion stems. Set aside until shrimp is done.
7. Once shrimp is cooked, transfer shrimp to the bowl containing the Sriracha sauce.
8. Using a spatula, gently toss shrimp in the sauce until shrimp is evenly coated.
9. Plate shrimp and garnish with green onions. Enjoy!
