Meatballs with Pasta

Have you ever had one of those recipes that you think have I made this lately? Then you go to make the dish and realize it has been years? Yeah, that is what happened to me last night. No kidding, I use to make this recipe at least every month. It wasn't until I went looking for my "meatball" pan, that I realized it had been TWO years since I had made my meatballs. Are you kidding me? Well, I rectified that situation last night.

I found this recipe many years ago in a Kraft Foods magazine. I have served the meatballs many different ways. Quite honestly, they are amazing just on their own. No special accompaniments 
are really needed. That is why I decided to make a simple pasta with marinara sauce to serve the meatballs with for dinner.

Meatballs with Pasta

You will need:
2 lb. ground beef
2 eggs, beaten
1 cup dry Italian bread crumbs
3/4 cup BBQ sauce, any flavor (Use your favorite brand. I use Sweet Baby Ray's.)
1/4 cup grated Parmesan cheese
2 tsp. garlic powder
Your favorite pasta (I used Penne)
Your favorite pasta sauce (I used Kroger Marinara)
**NOTE** If I had had some of my own spaghetti sauce froze, i would have used that instead of jarred. However, in a pinch, use what you have on hand.

In a large mixing bowl, add the meat

beaten eggs,

bread crumbs

BBQ sauce

Parmesan cheese

garlic powder

Mix, with your hands, until all ingredients are thoroughly combined.

Shape mixture into meatballs and place into a sprayed 9X13 pan.

This is when I really missed my "meatball" pan. Sadly, it was broken 2 years ago. I am still on the look out for a new one. It was a 15X20 pan, wonderful for this recipe. I really do miss that pan!

Bake the meatballs for 20 minutes at 400 degrees

While the meatballs are cooking, cook the pasta and begin heating the marinara sauce.

Once pasta and sauce are cooked, combine and mix well,

Serve the pasta with the meatballs placed on top.

Like I mentioned earlier, I have used these meatballs in many different recipes. They make AMZING meatballs for meatball sandwiches. I definitely also will not be waiting two years to make them again LOL!

Prep time: 15 minutes              Cooking time: 20 minutes              Difficulty: Easy

2 lbs ground beef
2 eggs, beaten
1 cup Italian breadcrumbs
3/4 cup of BBQ sauce, any flavor
1/4 cup grated Parmesan cheese
2 tsp garlic powder
Penne Pasta
2 jars marinara sauce

1. Preheat oven to 400 degrees.
2. In a large bowl, mix together the ground beef, eggs, breadcrumbs, BBQ sauce, Parmesan cheese, and garlic powder. Mix thoroughly.
3. Shape ground beef mixture into meatballs. (Size depends on your own personal preference)
4. Place meatballs into a sprayed 9X13 pan.
5. Bake for 20 minutes.
6. While meatballs are cooking, begin cooking pasta and marinara sauce.
7. Once pasta and sauce are cooked, combine and mix to all pasta is coated.
8. Serve pasta topped with meatballs.
