Baked Cod with Spinach and Tomatoes

As I have said before, I love fish. There are so many different ways you can prepare fish. My favorite fish will always be tilapia. However, I am really begin to love cod. It is a hearty cut of fish that can stand up to a lot of different preparations.

I really like this cod dish for two reasons. One - the fish takes on a great flavor from the tomatoes and spinach. Two - this is a great gluten free recipe. It was very easy to prepare and the men loved it. I had cooked this before; however, the busy son was very young and did not remember it. So, this was like a new dish to him and he loved it.

Now on to the recipe!


Baked Cod with Spinach and Tomatoes

You will need:
5 cod fillets
3 cups fresh spinach
1 can Jalapeno diced tomatoes
1 cup three cheese blend shredded cheese
Salt and Pepper

Preheat your oven to 350 degrees and wash/rinse your spinach.

Place the rinsed spinach in a prepared 9X13 baking dish.

Pat dry your fish. Salt and pepper the fish to taste. Place seasoned fish on top of the spinach.

Now, pour your can of diced tomatoes over top the fish and spinach. You definitely can use your favorite flavor of diced tomatoes in this dish. My family really like the zesty jalapeno flavor. It gives it a hint of spice without being over powering. This would also be great with canned fresh tomatoes.


Sprinkle the three cheese blend over the top of the fish.


Bake for 20 minutes or until fish flakes easily with a fork.

Again, I really love this dish. The flavors are amazing.

Now, I personally am going to add even more spinach next time. I love spinach anyway and when you cook spinach, it wilts. So, I am going to add more of my favorite green vegetable. I am also going to try it without the cheese. Do not get me wrong, I love it with the cheese. However, we will give a non-cheese version a chance.

Prep Time: 10 minutes          Cooking Time: 20 minutes       Difficulty: Easy

Ingredients:
5 cod fillets, patted dry
3 c fresh spinach, rinsed and drain
1 (15 oz) can diced tomatoes, zesty jalapeno
1 c three cheese blend shredded cheese
Salt and Pepper, to taste

Directions:
1. Preheat oven to 350 degrees.
2. Rinse and drain the spinach. Place in a prepared 9X13 baking dish.
3. Pat the fish dry. Season cod fillets with salt and pepper. Place fish on top of the spinach.
4. Pour can of tomatoes over the fish and spinach.
5. Sprinkle cheese blend over top the entire dish.
6. Bake for 20 minutes or until fish flakes easily with a fork.
7. Serve with your favorite side. Enjoy!!
