Buffalo Ranch Chicken Pasta Casserole

One of my favorite foods is chicken wings. Oh my! I love them pretty much anyway you make them. I especially love buffalo chicken wings. The spice from the buffalo wing sauce is wonderful to me because you know, I love spicy foods. I also like dipping my wings in ranch dressing. The flavor combination of the two just makes me happy.


Now, I have never made wings myself. However, I wanted something that mimicked that flavor but was a little simpler to make. Therefore, Buffalo Ranch Chicken Pasta Casserole was born. You get the spice of the buffalo wing sauce and the creaminess of the ranch combined with chicken and pasta. Yum! It was the perfect recipe to appease my wings cravings.

Buffalo Ranch Chicken Pasta Casserole

You will need:
4 boneless, skinless chicken breasts
12 oz package of bow tie pasta
8 oz Mexican Velveeta cheese, cubed
16 oz bottle Sweet Baby Ray's Buffalo Wing Sauce
1 cup Ranch dressing
2 cups Colby Jack shredded cheese, divided

Cut your chicken breasts into bite size chucks.

Put chicken into a large skillet, season with salt and pepper and cook until cooked through.


While your chicken is cooking, cube the Velveeta cheese.

Also, in a large bowl, pour in the buffalo wing sauce

and ranch dressing

Whisk until combined.

While your chicken is cooking, also begin your pasta and drain when cooked to al dente. Now, you can use whatever pasta you would like. I used bow tie because I already had it on hand.

Once chicken is cooked through, drain to remove any residual fat.

To the bowl containing the buffalo/ranch mix, add in the chicken

Velveeta cheese

1 cup of the shredded cheese

and pasta.

Carefully, combine all the ingredients. I honestly could take a spoon and eat this straight out of the bowl.

Pour into a 9X13 baking dish.

Top with remaining cheese.

Bake for 15-20 minutes in a 350 degree oven.

Yum, yum, yum!! It was like eating a deconstructed buffalo wing with pasta and cheese thrown in. My men really enjoyed this meal also. I would recommend serving a side salad with this dish to round everything out.

Prep time: 15 minutes             Cook time: 20 minutes               Difficulty: Easy

Ingredients:
4 Boneless, skinless chicken breasts
12 oz pkg bow tie pasta
8 oz Mexican Velveeta cheese, cubed
16 oz bottle Sweet Baby Ray's Buffalo Wing Sauce
3/4 C ranch dressing
2 C Colby Jack shredded cheese, divided

Directions:
1. Preheat oven to 350 degrees.
2. Cut chicken breasts into bite size pieces.
3. Place chicken pieces into a large skillet. Season with salt and pepper.
4. Cook until chicken is cooked through. Drain off any fat.
5. Cook pasta in salted water until al dente. Drain.
6. In a large mixing bowl, whisk together buffalo wing sauce and ranch dressing.
7. Add in cooked chicken, Velveeta cheese, 1 C shredded cheese, and pasta. Combine all ingredients together.
8. Pour mixture into a 9X13 baking dish.
9. Top with remaining 1 C shredded cheese.
10. Bake for 20 minutes.
11. Serve with alone or with a side salad. Enjoy!
