Carne Asada Tacos in the Slow Cooker

My family and I love Mexican food. I mean there is so many choices when it comes to Mexican food. However, every time we eat at a Mexican restaurant, the hubby usually orders the same thing ~ carne asada tacos. He loves them and I have to admit they are pretty good.

The other day when I was looking on Pinterest, I found a pin for Slow Cooker Carne Asada by $5 dinners. After reading the recipe, I knew I had to make this for the hubby. It sounded absolutely delicious and easy. However, I ran into a little problem. The original recipe called for flank steak. I tired EVERYWHERE to find flank steak. So, finally I asked the butcher at my local Kroger for an alternative. He pointed me to flat iron steak, saying it was better and less grainy than flank steak. Therefore, I was finally able to make this recipe!

This recipe went together whether quickly and easily be prepared in the morning rush. You could always make up the topping the night before and then slather it on the meat the next morning. Just make sure you have your handy food processor for the job!

Now on to the recipe!

Carne Asada Tacos in the Slow Cooker
Original recipe by $5 Dinners
Adapted by The Busy Cooking Momma

You will need:

2 - 3/4 to 1 lb flat iron steak
1/2 onion
6 cloves of garlic
1 small jalapeno, seeded
A handful of fresh cilantro
2 Tbsp olive oil
Salt and pepper
Cooking Spray

First, peel 6 cloves of garlic

Also, peel and cut up your onion into big pieces.

Add the garlic and onion to the food processor along with the seeded jalapeno. You do not need to slice the jalapeno. Just add it whole.

Add in the handful of fresh cilantro.

Finally, add in the 2 Tbsp of olive oil.

Place the lid on the food processor and pulse until a paste is formed.

Now, spray your slow cooker.

Add the steaks to the cooker.

Salt and pepper both sides of the meat.

Now, pour that gorgeous garlic/cilantro mixture over the top of the steaks.

Place the lid on the slow cooker. Cook on LOW for 8 to 9 hours.

Carefully remove the steaks from the slow cooker.

Shredded the meat with two forks.

Serve the tacos with your favorite condiments. I served mine with guacamole and pico de gallo.

My, oh my!! My taste buds were singing after eating this meal. It was so good!! My men loved it and I did as well. This recipe will definitely become a staple on our house.

I hope you enjoy!!

Love to you all from The Busy Cooking Momma!!
