Chunky Italian Sausage Pasta in the Slow Cooker

My slow cooker, my best friend. Sounds like a title of a cookbook or a cheesy romance novel doesn't it? However, it is my reality. I do not think there is an appliance in my household that I use more than my slow cooker (well, besides my stove).


There are SO many recipes out there for the slow cooker. Search Google, Pinterest, and other cooking sites and you will find more recipes than you could ever make in your lifetime. I also love creating my own slow cooker recipes. I like that I can use cheaper cuts of meat and the dish still tastes like a high price recipe. I like that I can put everything in the cooker, set it and walk away. No standing over the stove for long periods. No heating up the house on warm days. I mean, what is not to love about your slow cooker (see told ya, cheesy romance novel - LOL). 

My Chunky Italian Sausage Pasta in the Slow Cooker gives you a hearty meal that is full of flavor. I love the fact that I could use chunky pieces of Italian sausage instead of ground Italian sausage. I also loved playing with the flavors when creating the tomato sauce.

Now, onto the recipe!!


You will need:
7 Italian sausage links, casings removed
1 yellow bell pepper, roughly chopped
1 orange bell pepper, roughly chopped
1 large onion, roughly chopped
2 cans (14.5 oz) petite diced tomatoes
2 cans (15 oz) tomato sauce
1 Tbsp garlic powder
1 tsp black pepper
1 1/2 tsp salt
1/2 tsp cayenne pepper
3 Tbsp oregano
3 Tbsp Italian seasoning
1 box penne pasta, cooked and drained
1 1/2 c shredded Mozzarella cheese



Roughly chop your bell peppers and onions.


After removing casings from sausages, slice into chunky pieces.

Add peppers, onions and sausages into the slow cooker. 

In a large mixing bowl, add in your diced tomatoes and tomato sauce.

Then add in your spices and stir well.

Pour tomato sauce mixture over sausage mixture in slow cooker.

Mix well to incorporate flavors.

Place lid on slow cooker and cook on LOW for 8 hours.

Once cooking time has elapsed, switch slow cooker to high. 
Add in cooked pasta.

Stir and then add in shredded cheese.

Cook for about 3 minutes to allow cheese to melt and then serve with your favorite side dish.


This was a easy meal that had big flavor. Now, if you wanted to save time while preparing the dish, you could use either a homemade sauce you have on hand or a jar of spaghetti sauce. I personally like just creating my own tomato sauce at times. That way I can make the flavor as mild or bold as I feel that day.

7 Italian sausage links, casings removed
1 yellow bell pepper, seeded 
1 orange bell pepper, seeded 
1 large onion, roughly chopped
2 cans (14.5 oz) petite diced tomatoes
2 cans (15 oz) tomato sauce
1 Tbsp garlic powder
1 tsp black pepper
1 1/2 tsp salt
1/2 tsp cayenne pepper
3 Tbsp oregano
3 Tbsp Italian seasoning
1 box penne pasta, cooked
1 1/2 c shredded mozzarella cheese
Cooking Spray

1. Spray slow cooker with cooking spray.
2. Roughly chop the peppers and onion into bit size chunks. Add to slow cooker.
3. Cut sausages into bite size pieces and add to slow cooker.
4. In a mixing bowl, add the diced tomatoes, tomato sauce, garlic powder, black pepper, salt, cayenne pepper, oregano and Italian seasoning. Whisk until all ingredients are combined.
5. Pour sauce mixture into the slow cooker. Carefully stir all ingredients until well combined.
6. Place the lid on the slow cooker.
7. Cook on LOW for 8 hours.
8. Once cooking has elapsed, switch the cooker to HIGH. Stir in the cooked pasta and shredded mozzarella cheese. Let cook for an additional 5 minutes to cheese to melt.
9. Serve and enjoy!
