Egg and Bacon Breakfast Squares

Personally, if I had to pick my favorite meal of the day, it would have to be breakfast. I love making new things for breakfast. Yes, on the really busy mornings, it is hard to put something more than cereal on the table. I am trying to do better and on the weekends, I can really make a breakfast of champions. And if it is a holiday, I try to go the extra mile. Easter Sunday was one of those mornings.


I found the original recipe on Pinterest a couple of years ago. The original recipe can be found on Tablespoon.com. However, I have tweaked this recipe to make it more my own. I tried to make it a little more busy morning friendly in case I wanted to make it one morning.

Now, on to the recipe!!

Egg and Bacon Breakfast Squares

You will need:
2 cans crescent rolls
8 eggs
16 slices precooked bacon, cut in half
1/2 c shredded cheese blend
Salt and Pepper
1 avocado, sliced

Preheat your oven to 400 degrees and line two baking sheets with parchment paper.

Carefully, unroll the crescent rolls and split them down the middle. You should now have two large squares that contain four crescent rolls. Pinch the seams together. Then fold up the edges around the square.

Sprinkle 1 Tbsp of the shredded cheese on each square.

Carefully, crack two eggs into each square.

Place 4 pieces of bacon on each square.

Top with another Tbsp of cheese.

Season with salt and pepper.

Bake for 15 minutes or until eggs are cooked to your liking and edges are golden brown.

Top with the sliced avocado and serve.

This was so delicious. Actually, I would have to say it was deliciously yummy! The combination of the crescent rolls, eggs, bacon and avocados all together in this little square was SO GOOD. Also, this was a hearty dish that kept me full well into the afternoon.

Prep Time: 10 minutes             Cooking Time: 15 minutes            Difficulty: Easy

Ingredients:
2 cans crescent rolls
8 eggs
16 slices precooked bacon, cut in half
1/2 c shredded cheese blend
Salt and Pepper
1 avocado, sliced

Directions:

1. Preheat oven to 400 degrees. Line two baking dishes with parchment paper.
2. Carefully, unroll the crescent rolls and split down the middle seam. There should now be two large squares.
3. Pinch seams together. Fold the edges up creating a lip.
4. Sprinkle 1 Tbsp of cheese on each square.
5. Carefully, crack two eggs into each square.
6. Top each square with 4 slices of bacon.
7. Sprinkle another tablespoon of cheese over the top of the bacon and eggs.
8. Season with salt and pepper.
9. Bake for 15 minutes or until eggs are cooked to your preference and edges are golden brown.
10. Top each square with slices of avocado.
11. Serve and enjoy!
