Breakfast Ham Cups


I am always looking for breakfast recipes that can be made in advanced and used throughout the week. Our mornings are super hectic and breakfast is sometimes a quick poptart as we head out the door. Yea, mom of the year here, LOL!!

Since yesterday was a day off for everyone, I decided to do some experimenting. I wanted something that had some good protein, low in carbs and could be ate on the run if needed. So, Breakfast Ham Cups was born.

What I love about these delicious little cups is that it is like a mini omelet in a ham bowl. I also love that you can play around with the ingredients and make them the way YOU want them. This time I just used mushrooms and cheese. Next time, I am thinking about maybe sauteed onions and green peppers. Actually, the ideas could be endless. An additional plus to these are the fact they are a gluten free breakfast item.

Now on to the recipe!!



Breakfast Ham Cups
By The Busy Cooking Momma

You will need:
24 slices of ham (Either thinly sliced lunch meat style or thinly sliced deli style)
10 eggs
1/3 cup diced canned mushrooms
1/2 cup shredded cheese, your choice of flavor
1/8 tsp cayenne pepper
1/8 tsp garlic powder
1/4 tsp salt
1/8 tsp pepper
Cooking Spray



Preheat your oven to 400 degrees and spray your muffin tin with cooking spray.

Line each muffin cup with 2 slices of thinly sliced ham. It looks to me like little ham flowers!!

In a large mixing bowl, add your eggs

Cayenne pepper

Salt

Pepper

and garlic powder.

Whisk eggs and spices well. I love my large Pampered Chef batter bowl for these. It makes it so much easier to pour into the ham cups.

Meanwhile, roughly dice up the canned mushrooms and add to the egg mixture.


Now, add your cheese and mix well.


Now, carefully pour the egg mixture into the ham cups. Fill each cup almost to the top. You don't want to overfill because the egg will run out of the cups.


Bake the ham cups for 15 minutes and then top with a little more cheese on top.

Bake an additional 5 minutes to allow cheese to melt and eggs to finish cooking.


Don't they look delicious?!?! You can serve these as is or top with your favorite condiment. I added guacamole to ours and it really enhanced the flavor. 


The men really enjoyed these. I thought the flavor was really good. Again, I can not wait to play with different additions and toppings. Honestly, again, the possibilities are endless.

Prep Time: 10 minutes                   Cooking Time: 20 minutes              Difficulty: Easy

Ingredients:
24 slices thinly sliced ham
10 eggs
1/2 c shredded cheese, your choice of flavor
1/3 c diced mushrooms

1/8 tsp garlic powder
1/8 tsp black pepper
1/4 tsp salt
Cooking spray

Directions:
1. Preheat oven to 400 degrees. 
2. Spray muffin tin with cooking spray.
3. Line each muffin cup with two pieces of ham.
4. In a large mixing bowl, add the eggs, cayenne pepper, garlic powder, black pepper and salt. Whisk well.
5. Roughly dice the canned mushrooms, add to the egg mixture and mix well.
6. Add in shredded cheese to the egg mixture and mix well.
7. Carefully pour egg mixture into each ham cup. Fill each cup almost to the top. Do not overfill because egg mixture will run out.
8. Bake for 15 minutes, remove and add a little more cheese to the top of each cup.
9. Bake an additional 5 minutes to finish setting eggs and melt the cheese.
10. Serve as is or with your favorite condiments. Enjoy!

  2. These look amazing. I tried a similar recipe using bacon instead of the ham, but the bacon shrank and didn't hold the filling well. This would be much better.
