Grandpa Daniel's Skillet Chop Suey

I was very blessed growing up to be surrounded by wonderful cooks. Though the kitchen was not my favorite place to be when I was young, I did learn a lot from all of them. One of those wonderful cooks was my grandpa Daniel.

I loved going to his house and eating. However, when I knew he was making his skillet chop suey, I was in heaven. I absolutely love this recipe and I now want to share it with you.


Now on to the recipe!!

Grandpa Daniel's Skillet Chop Suey
Recipe by T. Daniel

2 T Extra Virgin Olive Oil
1 1/2 c celery, sliced
1 large onion, cut into strips
1 large green pepper, cut into strips
2 to 3 T minced garlic
1 1/2 pound ground beef
1 tsp salt
1/8 tsp pepper
2 1/2 T cornstarch
1 1/3 c water
2 T soy sauce
Cooked brown rice

In 2 T of EVOO,


Saute the celery

Green peppers

Onions

and the minced garlic.

Saute until the vegetables are crisp and tender. Remove from skillet.


In the same skillet, brown your ground beef seasoned with salt and pepper.


Drain ground beef when browned and return to the skillet. Sit to the side.


Once the meat is cooked, in a measuring cup, mix together the water

cornstarch

and soy sauce.

Mix with a whisk until all ingredients are combined.

Return skillet to stove over medium heat and add in the vegetables.

Then add in the cornstarch slurry.

Mix to combine all ingredients. Allow to cook until sauce has thickened.

While sauce is thickening, cook your desired amount of rice.

Serve the chop suey over the cooked rice.

This is a very satisfying meal. You could serve as is (like we do) or serve with a salad. The other thing I love about this meal is that it is basically a one pot meal, except for the rice.

Prep Time: 10 minutes                Cooking Time: 15 minutes              Difficulty: Easy

Ingredients:
2 T Extra Virgin Olive Oil
1 1/2 c celery, sliced
1 large onion, cut into strips
1 large green pepper, cut into strips
2 to 3 T minced garlic
1 1/2 pound ground beef
1 tsp salt
1/8 tsp pepper
2 1/2 T cornstarch
1 1/3 c water
2 T soy sauce
Cooked brown rice
Directions:
1. In a large skillet, saute the celery, onion, green pepper and garlic in the EEVO until vegetables are crisp and tender. Remove from skillet.
2. In same skillet, brown the ground beef seasoned with salt and pepper.
3. Once browned, drain ground beef and return to the skillet.
4. While meat is resting, combine water, cornstarch and soy sauce in a measuring cup. Whisk until all ingredients are combined.
5. Return skillet to the stove over medium heat. 
6. Add vegetables to ground beef.
7. Add cornstarch slurry to ground beef and vegetables.
8. Stir until all ingredients are combined. Simmer and stir occasionally to allow sauce to thicken.
9. While chop suey is simmering, prepare rice according to package directions. Amount depends on your needs.
10. Serve chop suey over rice. Enjoy!
