Bacon Ritz Chicken Tenders


Chicken has always been my go to meat when cooking. There are SO MANY ways you can prepare chicken. I mean, really! Check any recipe site out there and you will find hundreds upon hundreds of recipes for chicken.

The other day, I knew I wanted to make chicken tenders. However, when I went to my local Kroger, the price for chicken tenders was WOW! So, I picked up a package of boneless, skinless chicken breasts and cut them into tender size pieces. Not only did this save me money, I had three chicken breasts left for another meal.

After settling on chicken tenders, the next question was what to do with the tenders? Just bake them, fry them, or what? Off to the pantry I went and found my favorite coating, Ritz Crackers. And even better, I had my favorite flavor on hand, bacon. So, Bacon Ritz Chicken Tenders was born.


Now on to the recipe!



Bacon Ritz Chicken Tenders

You will need:
3 boneless, skinless chicken breasts
1 1/2 sleeves Bacon flavored Ritz Crackers
1 T garlic powder
1 tsp cayenne pepper
1/2 tsp black pepper
1/4 tsp salt
1 stick of butter
2 eggs

Preheat your oven to 400 degrees. While oven is preheating, cut your chicken breasts into tender size pieces.

After cutting your chicken, crush your crackers and put into a bowl.

Now, begin adding your spices - Garlic powder

Cayenne pepper

Black pepper

and Salt.

Mix well to incorporate all the spices.

In a microwave safe bowl, melt your butter and add to your cracker crumbs.


Mix until cracker crumbs and butter is well incorporated.

In a separate bowl, beat your eggs.

Now, dip your tenders into the egg and then roll in crumb mixture. You will want to pat the crumb mixture into the chicken to make sure it sticks to the chicken. 

As you can see, my chicken pieces were not completely covered. However, that is okay if they are not completely covered. The flavor is still there. 

Bake the chicken for 20 minutes or until cooked through.


Serve with your favorite side dishes and dipping sauce.

The flavors were great. The only changes I might make next time is lessen the cayenne pepper to 1/2 tsp and not dipping the chicken in egg first. I think the coating might stick a little better without the egg. Otherwise, the recipe was a win!

Prep Time: 15 minutes             Cooking Time: 20 minutes          Difficulty: Easy

Ingredients:
3 boneless, skinless chicken breasts
1 1/2 sleeves Ritz Crackers, Bacon flavored
1 T garlic powder
1 tsp cayenne pepper
1/2 tsp black pepper
1/4 tsp salt
1 stick butter
2 eggs

Directions:
1. Preheat oven to 400 degrees.
2. Cut chicken into tender size pieces. Set aside
3. Crush crackers and place into a large bowl.
4. To the cracker crumbs, add the garlic powder, cayenne pepper, black pepper and salt. Mix well.
5. Cut the butter into pieces and place in microwave safe bowl. Melt butter and add to crumb mixture. Mix well.
6. In another bowl, beat the eggs.
7. Now, take a chicken tender, dip into the egg mixture and then into the cracker crumb mixture. Press cracker crumb mixture into the chicken and place on baking sheet.
8. Complete step 7 until all chicken tenders are coated.
9, Bake for 20 minutes or until chicken is cooked through.
10. Serve with your favorite side dish and dipping sauce if you would like. Enjoy!
