The Busy Cooking Momma's Homemade Mac N' Cheese

My son has been begging me to make homemade mac n' cheese for quite sometime now. He kept telling me "I like the blue box, but I would love to try homemade." What is a mom suppose to do when your child phases it like that? Well, this mom went in search of a homemade mac n' cheese recipe.

I put a post out on my Facebook page about needing a recipe and boy did my friends/family deliver. The recipe I needed up sort of using was my Grandmother Anderson's recipe. My grandmother was amazing cook and I miss seeing her in the kitchen. Also, she could make homemade candy and desserts like no other. 

Now, I say sorta of using her recipe because I tweaked it a little. I used milk in mine instead of the pasta water like she used in her's. Plus, I added just a little bit of butter. The men seemed to like it and my son ate two helpings. So, I guess you can call it a success.

Now on to the recipe!

The Busy Cooking Momma's Homemade Mac N' Cheese

You will need:
1 box of elbow macaroni
1 block (8 oz) of colby jack cheese
1/2 c of milk
4 T butter
Salt and Pepper to taste

Place a large pot of water on the stove and season it with salt. Let it come to a boil over high heat.

While you water is coming to a boil, cube your cheese.

Once water is boiling, add in your pasta. Cook until al dente.

After pasta is done cooking, drain and return to pan. Turn the heat to medium. 

Now, begin adding in the cheese.

Once cheese has begun melting, begin adding in the milk slowly.

Now add in the butter, salt and pepper.

Continuously stir until cheese is melted. Remove from heat once heated through.

Serve as is or with your favorite main dish. 

I honestly think I will be making my mac n' cheese like this from now on. I am not going to say I am never going to make the blue box again. However, if I have the time, homemade will be the way. Also, next time I will be adding more cheese. According to the cooking hubby, it was good but it needed more cheese. LOL! I liked it as is but I will keep tweaking until everyone is happy!

Prep time: 5 minutes              Cooking Time: 20 minutes             Difficulty: Easy

1 box elbow macaroni
1 block (8 oz) colby jack cheese
1/2 cup milk
4 T butter
Salt and Pepper to taste

1. Over high heat, bring a pot of salted water to a boil.
2. While water is heating, cube the cheese and set aside.
3. Once the water has began to boil, add the macaroni and cook to al dente.
4. After macaroni has cooked, drain and return the macaroni to the pot.
5. Over medium heat, begin adding the cheese a little at a time. Make sure to continuously stir.
6. When the cheese has almost completely melted, begin adding the milk slowly. Continuously stir while adding all the milk,
7. Now add in the butter, Again, continuously stir.
8. Continue to stir until the everything is melted and cooked through. Remove from heat.
9. Serve as is or with your favorite side dish. Enjoy!
