Hearty Beef over Noodles in the Slow Cooker

 I love a good beef recipe for the slow cooker. I even love a recipe more if I do not have to do a lot of "other" cooking before placing everything in the slow cooker. What do I mean about "other" cooking? I talking about when you have to brown meat, simmer something on the stovetop, etc. For this busy momma, that is just too much extra time especially on busy mornings. I just like to through the ingredients in, give everything a good stir (if needed), set the timer and walk away. Thus, this recipe was born.


I enjoyed experimenting with different ingredients in this recipe. I used a can of Sprite as the liquid in this recipe. I have had other recipes that have called for a can of soda when cooking in the slow cooker. It really works well for a tenderizer for cheaper cuts of meat in my opinion. Plus, it really enhances the flavor. Some would find it a little strange; however, give it a try. I think you will really enjoy it!

Now, on to the recipe!

You will need:
2 to 3 lb chuck roast, cut into cubes
5 red potatoes, cut into cubes
1 onion, cut into chunks
1 8oz container of mushrooms, roughly sliced
1 package onion soup mix
1 10 3/4oz can cream of mushroom soup
1 can Sprite
1 package egg noodles


Place the cubed beef into the slow cooker.

**NOTE** I used a chuck roast and cut it into cubes when I got home. The reason being the roast was cheaper than stew meat. You definitely could buy stew meat and use it in this recipe. The choice is up to you.

Now, add in the mushrooms,

potatoes,

onion.

Pour the soup over the top of the beef and vegetables.

Pour the packet of onion soup mix over the top of everything.

Now, for the special ingredient, the can Sprite.

Give everything a really good mix to combine all the ingredients.

Cook on LOW for 8 hours.

I prepared the noodles when I got home from work. Dinner was on the table in under 15 minutes.

Of course, you could serve this without the noodles. You could also add some other of your favorite vegetables and have more of a beef stew recipe. The choices are definitely up to you.

Prep Time: 20 minutes                      Cooking Time: 8 hours                 Difficulty: Easy


Ingredients:
2 to 3 lb chuck roast, cut into cubes
5 red potatoes, cut into cubes
1 onion, cut into chunks
1 8oz container of mushrooms, roughly sliced
1 package onion soup mix
1 10 3/4oz can cream of mushroom soup
1 can Sprite
1 package of egg noodles

Directions:
1. Place beef, mushrooms, potatoes and onion in the slow cooker.
2. Pour the cream of mushroom soup over the top of beef and vegetables.
3. Add in the packaged of onion soup mix.
4. Now, pour in the can of soda.
5. Stir well to combine all the ingredients.
6. Place lid on the slow cooker.
7. Cook on LOW for 8 hours.
8. Serve with cooked egg noodles. Enjoy!
