Slow Cooked Kielbasa, Sauerkraut and Potatoes

I honestly think my slow cooker is begging for mercy. It is probably screaming uncle right now but I am ignoring it. With the heat wave my beautiful state of West Virginia is in right now, I refuse to use my stove. So, the slow cooker was called into service again tonight.

Tonight's dinner features one of my hubby's favorites, kielbasa. He loves anything made with kielbasa. We both also like sauerkraut, though we differ on our favorite flavor. He likes the more sweet, Bavarian style and I like the more tart, original style. You could definitely use your favorite in this recipe. I also wanted to add some potatoes to give it some bulk and a little onion for a pop of flavor. I think it turned out to be a really nice rustic dish that I can not wait to make on a cold winter night. I hope you will enjoy it as well.

Now, on to the recipe!

Slow Cooked Kielbasa, Sauerkraut and Potatoes

You will need:
2 14 oz packages of kielbasa, sliced into 1/2" pieces
4 red potatoes, diced in chunks
1 onion, sliced
1 32 oz jar of sauerkraut, drained
1 10.5 oz can of beef broth
1 Tbsp minced garlic
1 tsp red pepper flakes
1/4 tsp cumin
1/4 tsp salt
1/4 tsp pepper


In a mixing bowl, mix together the beef broth, minced garlic

cumin

salt and pepper


Whisk all the ingredients well.

Now, in the slow cooker, add in the kielbasa,

potatoes,

onion,

and sauerkraut.

Now, pour the broth mixture over all the other ingredients.

Stir everything well to make sure everything is combined.

Cook on LOW for 7 1/2 hours.

This is perfect as a stand alone dish or you could serve it with a nice salad.

I loved the flavor of this dish. The sauerkraut and the seasonings gave everything a nice pop of flavor. I really enjoyed the combination of the potatoes and sauerkraut as well. You will definitely will not leave the table feeling hungry after this eating this dish.

Prep Time: 15 minutes                          Cooking Time: 7 1/2 hours            Difficulty: Easy

Ingredients:
2 14 oz packages of kielbasa, sliced into 1/2" pieces

Directions:
1. In a medium size bowl, mix together the beef broth, minced garlic, red pepper flakes, cumin, salt and pepper. Set aside.
2. In the slow cooker, add the kielbasa, potatoes, onion and sauerkraut.
3. Pour the beef broth mixture over the other ingredients.
4. Stir well to combine all the ingredients.
5. Place the lid on the slow cooker.
6. Cook on LOW for 7 1/2 hours.
7. Serve as a stand alone entree or with your favorite side dish. Enjoy!!

  3. I just put this together in the crockpot. Can't wait for dinnertime. Only addition immade was adding a couple of sliced apples for added sweetness.
