Sweet Potato, Apple and Bacon Hash

Ahh, Fall has finally came to my beautiful state of West Virginia. Time for all the great flavors of Fall to start appearing. Nothing says Fall to me like sweet potatoes and apples. I enjoy both and when they are combined, oh my!

When I was creating this recipe, I knew I wanted to use one of the butter samples I received from Epicurean Butter. The first butter that came to my mind was the Maple Syrup Butter. I knew it would add that extra touch of Fall to this dish and I was not wrong. The pairing of the sweet potato, apple, bacon and butter was mouth watering. I know you are going to love this fabulous dish.

Now, on to the recipe!

Sweet Potato, Apple and Bacon Hash

You will need:
3 sweet potatoes, peeled and cubed
4 apples, cored and diced
1 3.5 oz tub Epicurean Maple Syrup Butter
6 slices thick cut bacon, sliced into small pieces


Directions:

Preheat oven to 375 degrees.

In a medium size skillet, cook bacon with 2 Tbsp of butter medium-high heat.

While bacon is cooking, melt the rest of the butter in a small sauce pan over medium heat.

Once bacon is cooked and butter is melted, in a large bowl combine sweet potatoes,

apples,

bacon,

and butter. Mix well to distribute the butter evenly.

Pour hash into a 9X13 baking dish and bake for 30 minutes or until sweet potatoes are tender.


Seriously, this dish is Fall in your mouth. I served this as a side dish to accompany pork chops. However, this recipe could be a stand alone dish. The flavor from the maple syrup butter was wonderful. It went very well with the other three ingredients. I definitely can not wait to make this dish again.

Ingredients:

7. Serve as a main dish or a side dish. Enjoy!!
