Slow Cooker Roasted Chicken

We have all seen them in our grocery stores - Rotisserie chickens. They sit there just waiting for us. They act like a beacon to those of us short on time but want to eat something other than takeout. I personally have picked up a rotisserie chicken when I was stumped about dinner and in a big time crunch. However, what if I told you, you could make a whole chicken at home for less than those already prepared rotisserie chickens? It is possible my friends and I am going to show you how to make a PERFECT roasted chicken in your slow cooker.

This recipe contains only THREE ingredients. Now, how simple is that? The flavor of this recipe can definitely be changed based on what you prefer. I used two of my favorite seasonings while preparing this recipe - Epicurean Butter Sea Salt and Cracked Pepper butter and McCormick Grill Mates Montreal Chicken Seasoning. Both gave the chicken a wonderful flavor.

I know you and your family is going to LOVE this recipe!

Now, on to the recipe!

You will need:

1 5 to 6 lb chicken, whole with skin on
1 3.5 oz tub Epicurean Butter Sea Salt and Cracker Pepper Butter
1/2 c McCormick Grill Mated Montreal Chicken Seasoning
Aluminum foil

Rinse chicken inside and out. Pat dry.

Cut small slits in the chicken skin on both sides. Stuff butter under the skin through the slits.

Season both sides of the chicken liberally with chicken seasoning.

Now, crunch up eight pieces of aluminum foil into balls.

Place in the bottom of the slow cooker. Place the chicken on top of the aluminum foil balls.

Place lid on the slow cooker. Cook on LOW for 8 hours.

Oh My Goodness!! I will never buy rotisserie chicken from the supermarket again. This chicken was so moist and tender. I especially loved the fact that the season could be tasted but was not overpowering. The Sea Salt and Cracked Pepper butter from Epicurean really gave the chicken extra flavor and the skin was crispy and flavorful with the McCormick's Grill Mates. You will never want to buy supermarket chicken again!!

I hope you enjoy!!

Love to you all from The Busy Cooking Momma!!
